the other night, we decided to make enchiladas for the first time. the ingredients are fairly easy to find at the grocery store, and it's not too difficult to make! it does require some prep time though.

chicken enchiladas; chicken, 1 can condensed cream of chicken soup, 1 cup sour cream, onions, ¼ teaspoon chili powder, 1 tablespoon butter, 1 package mild taco seasoning mix, green onions, cilantro, 1 cup water, 3 teaspoons lemon juice, ½ teaspoon garlic powder, 4 cups cheddar and mexican style four cheese blend, 1 can enchilada sauce, and corn tortillas.


in one pan cook the chicken, onion, butter, taco seasoning mix, green onions, water, lemon juice, and garlic powder. in the other, combine the cream of chicken soup, sour cream, and chili powder.


fill each tortilla with the chicken and sprinkle cheese on top. roll it and place seam side down in a deep tray-- i put some cream of chicken soup on the bottom of the tray.


then i basically poured in the rest of the cream of chicken soup and dumped a can of enchilada sauce, the rest of the cheese, and green onions for color. bake the enchiladas at 350° until hot.


and while i waited for it to cook, i decided to make some delicious guacamole. ♥

guacamole; avocados, tomatoes, cilantro, lemon, seasoning.
