i tried my hand at making a pasta salad for small group the other night-- something easy, with not a lot of ingredients or prep time. and so browsed the pioneer woman for a recipe. since i made four times the amount, i tweaked the ingredients. however, even though i went heavy with the seasoning, it seemed that it still needed more of a punch. in any case, i'll definitely try this recipe again.


pasta salad with tomatoes, zucchini, and feta; 12 oz. bowtie pasta, 2 tablespoons olive oil, 1 whole lemon, 2 zucchini, 10 oz. grape tomatoes, ⅓ cup minced fresh parsley, 6 oz. crumbled feta cheese, salt, pepper.


i don't usually eat raw zucchini, but it definitely tasted great in this pasta salad.


the trick is to cut it thin though, otherwise it distracts the taste.


i also used roma tomatoes and pear tomatoes fresh from the garden because there were no grape tomatoes available. in my opinion, it's more for the color really.


so it's quite simple, cut everything and mix it together. i also added bacon, because it makes everything taste better! and for some reason the pasta really soaked up the oil and lemon juice so it was dry by the time we ate it. next time i'll really drench the pasta salad.
